I know a dead fish can raise your nitrates, will a dead Zebra turbo snail raise it???

Yup.  Anything dead could.  In a newer tank, a dead snail could cause a full algae bloom.  Sometimes snails get lethargic, but if you notice crabs or worms hanging around, its a gonner.   Get it out of your tank.
