Really the nitrates will go away I though they only went away with water changes?

Water changes are the fastest way, but that can be bolstered with some other methods.  A refugium is the most popular.  You can grow cheato or other macro algae which will consume those nitrates.  Now it's nearly impossible to keep your nitrate at zero with those methods, but it can help.
